In a bowl, spray tofu with oil, add paprika, salt and pepper and toss to coat.
Heat a non-stick frypan, cook tofu for 5-7 minutes.
Place avocado in a small bowl, add lemon juice and salt and pepper, mash to combine.
In another bowl, combine all dressing ingredients together with a fork.
To assemble tacos, spread avocado on each tortilla, top with lettuce, cabbage, tomatoes and tofu and drizzle over dressing to serve.
