Wrap tofu in paper towel and press under a weight to remove water.
Place rice, water and salt in a small saucepan and simmer, covered for 30 minutes. Remove from heat and stand for 5 minutes before fluffing with a fork.
Whilst rice is resting, slice tofu into triangles and cook in oil in a non-stick frypan over medium heat until golden on both sides. Remove from pan and toss with soy sauce and garlic and set aside.
Divide rice between bowls, add vegetables and splash over vinegar. Top with tofu, mayonnaise, coriander and chilli to serve.
