Heat oil in a medium saucepan over medium heat. Add bacon and cook for 4-5 minutes until crisp. Set aside half the bacon.
Add onion and celery to the saucepan with the bacon and cook, stirring, for 5 minutes until soft.
Add garlic and cook for a minute until fragrant.
Add bay leaves, stock and split peas. Bring to a gentle simmer, cover and cook for 30 minutes or until peas are tender.
Discard bay leaves and stir through parsley. Season with salt and pepper to taste.
Divide soup between bowls and top with reserved bacon to serve.
