Smoked Salmon & Asparagus Crepes

Blend all crepe ingredients together and allow to stand for 10 minutes.
Heat a non-stick frypan over medium heat, toss asparagus with oil and cook for 3-5 minutes, until tender and charred. Remove from pan and set aside.
Add 2-3 tbs crepe batter to the heated frypan and cook for 1 minute on each side, repeat with remaining mixture.
Combine ricotta, lemon juice and chives together in a small bowl.
To assemble, spread equal portions of ricotta mix onto each crepe, top with ribbons of smoked salmon, asparagus and season with salt & pepper.
