To make pancakes, place beetroot, milk, eggs, maple syrup and vanilla in a small food processor and blend until smooth.
Add flour, cocoa and baking powder and pulse until combined.
Heat a large non-stick frypan over medium heat. Working in batches, spoon 6 even-sized pancakes into pan. Cook for 2 minutes each side until cooked through.
Melt chocolate in microwave in 30 second bursts until smooth. Alternately, place chocolate in a glass bowl over a saucepan of simmering water and melt until smooth.
To serve drizzle pancakes with melted chocolate and top with raspberries.
