Peaches & Cream Spelt Crepes

Place flour, milk, egg and vanilla in a small bowl and whisk to combine.
Heat oil in a medium non-stick frypan over medium heat. Pour in a quarter of the batter and swirl pan to coat evenly. Cook for 2 minutes until golden on the bottom. Flip and cook for a further minute on the other side. Transfer to a plate and repeat with remaining mixture.
Mix ricotta with protein powder and spread down the centre of each crepe.
Layer peach slices over the ricotta. Fold crepe over peaches, drizzle with maple syrup and serve sprinkled with almonds.
