Place zucchini in a clean tea-towel or paper towel and squeeze as much liquid out as possible. Mix all fritter ingredients, except oil and honey, and form into 8 patties.
Heat oil in a non-stick frypan over medium heat and cook fritters for 4 minutes, turning half way through, until golden brown. Place on paper towel to drain any excess oil. Drizzle over honey and season with salt.
Serve fritters with vegetables, almond butter, bocconcini and warm pita bread followed by raspberries and chocolate.
