Lentil Fried Rice With Kale & Mushrooms

Heat oil in a saucepan with onion, garlic. Cook for about 4 minutes until onion has softened.
Stir through mushrooms and kale and continue to cook for 4-5 minutes until mushrooms are cooked and kale has wilted.
Stir through rice, lentils, soy sauce and walnuts and continue to cook for a few more minutes to heat through. Adjust seasoning and top with parsley and chilli to serve.
