Leftover Turkey & Ham Filo Pies

Preheat oven to 180°C and line a baking tray with baking paper.
Melt butter in a non-stick saucepan over low heat. Add flour and stir constantly for 1 minute until mixture begins to bubble. Gradually whisk in some of the stock to form a smooth paste. Add remaining stock and milk and continue to cook, stirring for a further 2 minutes until thickened.
Add mustard, turkey, ham, peas, parsley and mix to combine. Season with salt and pepper and set aside to cool.
Take one sheet of filo, spray with oil and place another sheet on top. Spoon 1⁄4 of the pie mixture onto the filo at one short end. Fold up the sides and roll up to make a parcel, brushing with water to seal the edges. Transfer to baking tray and repeat with remaining filo and pie mixture.
Spray pies with oil and bake for 25 minutes until golden and crisp and serve with salad greens.
