Kimchi Savoury Porridge

Place oats in saucepan with vegetable stock and broccoli. Bring to boil and simmer covered for 7 minutes. Add water if more liquid preferred. Add kale in final minute of cooking.
In another small saucepan, bring small amount of water to the boil, reduce to gentle simmer and add vinegar. Stir in a circular motion to create a vortex and gently slide cracked eggs into the water and cook for 4 minutes. Remove with slotted spoon, pat dry.
Serve porridge in a bowl, top with kimchi, eggs, sliced avocado and season with salt and pepper.
