Heat oil in a non-stick medium sized saucepan over medium heat. Add onion and cook for 10 minutes or until soft and caramelised.
Add ginger and cook for another minute until fragrant.
Add curry powder, rice and stock. Bring to a gentle simmer, cover and cook for 10 minutes or until rice is tender. Remove from heat.
Stir through lentils and peas, cover and set aside for 5 minutes to warm through. Adjust seasoning.
Divide between bowls, top with cashews and serve with yoghurt.
