Easy Bolognese With Courgetti

Heat oil in a medium sized saucepan over medium heat, add onion and cook for 5 minutes, or until soft.
Add beef and cook until just browned. Add garlic and tomato paste and cook for a minute, stirring well. Add tomatoes, water, basil and salt, bring to the boil and simmer over low heat for 15-20 minutes.
For the zoodles, using a vegetable spiralizer or julienne peeler, create noodles with the zucchini. Place in a colander and sprinkle with salt. Leave to soften for 10 - 15 minutes, then using paper towels, squeeze to remove excess moisture.
Heat oil in a large non-stick frypan over medium heat. Sauté zoodles for 3 - 5 minutes or until warmed through but still firm, toss with sauce and serve immediately.
Note: The sauce can be made well ahead of serving but due to the high water content of zucchini it is best to make the zoodles just prior to eating. If not possible, simply drain off water before eating.
