Courgette & Hazelnut Flat Breads

Place two unlined baking trays in the oven and preheat to 180°C.
Heat a large non-stick frypan over medium heat and cook onion for a few minutes until beginning to soften. Add zucchini and garlic and cook for a few more minutes until zucchini is lightly browned. Season with salt and pepper.
In a small bowl, mix together cottage cheese and parmesan and season. Spread pitas with cheese mixture and arrange zucchini and onion mixture on top.
Place pita breads on preheated trays and bake for 10 minutes or until crisp.
Scatter over mint, chilli and hazelnuts. Cut into wedges and serve.
