Place rice, coconut milk, salt, vanilla, maple syrup and water in a pot and bring to boil, reduce to a simmer and cook covered for 30 minutes. Stir frequently until rice is tender. (Time varies depending on length of time rice is soaked).
Top with fruits, slivered almonds and yogurt to serve.
