Heat oil on barbecue or large non-stick frypan over medium heat. Add onions, thyme and season with salt and pepper. Cook, stirring occasionally, for 10 minutes until soft and caramelised. Set aside.
Meanwhile, season steaks with salt and pepper and cook for 2 minutes a side for medium, or until cooked to your liking. Transfer to a plate and cover loosely with foil to rest for 5 minutes then slice.
Spread half the toast with chutney. Top both with rocket and tomato slices. Season with salt and pepper. Divide steak between sandwiches, top with cheese and finish with caramelised onions and remaining slices of sourdough for the top. Cut sandwiches in half and serve.
