Braised Chicken With Vegetables

Season chicken with salt & pepper.
Heat a large non-stick pot over medium heat. Add chicken and cook for 10 minutes, turning halfway through to brown. Remove chicken from pot and set aside.
Reduce heat, add leek and carrot to the pot and cook for 5 minutes. Add garlic and cook for another minute.
Return chicken to pot, add stock and sweet potatoes and bring to a simmer. Cover with a lid and cook for 15 minutes or until chicken is tender.
Stir through peas and season to taste.
Divide between bowls and top with parsley to serve.
