Acai, Chia Pudding, Berry, and Granola Overnight Parfait

In a medium bowl, whisk together the chia seeds, 1 cup (235 ml) of the cashew milk, and the vanilla. Allow to sit for 30 minutes, or until the seeds have absorbed all the liquid; whisk halfway through.
Meanwhile, in a high‑powered blender, add the acai powder, berries, banana, almond butter, coconut, and remaining ¼ cup (60 ml) cashew milk. Blend until smooth.
To assemble the parfaits, add half of the chia mixture to the bottom of a glass, add half of the granola, and then top with half of the acai smoothie and half of the berries. Repeat for the other parfait.
Cover and transfer to the fridge and refrigerate overnight.
